It is a half-underground building, located in the place of the ancient cellar and isolated with thick walls. Thanks to that, the humidity and temperature conditions are stable all the year round. Inside lie the oak barrels containing the ageing wine.

Woods are mainly from American and French oak, chosen from the best cooperages and with different natural drying times. The way we age our wines in those barrels takes us to the highest respect for the identity of the grape, in this case Mencía.
