Vineyard:
Vineyards are located in an area called Viñademoya, close to the winery and they are owned by the family. The pruning system for these vines is the Goblet system. They are over 100 years of age and divided into “Leiros”, that are the small vineyards throughout our region, El Bierzo. Altitude for this estate is between 650 and 750 m. Some of these Leiros have a slope over 25%. These vineyards probably have the biggest area of pre-phylloxera vines in El Bierzo region.
Soil:
Steep, chalky and shallow soil comprised of a sub-layer rich in minerals.
Aging:
14 months in casks of new French oak.
Production:
After a thorough monitoring of the Leiros, we start the harvest by hand. Traditionally, the Leiros are only harvested by members of the family. Therfore, the first grape salection is carried out by the same persons. Time between the harvest and the arrival of the grapes at the winery is minimal and it is done during the period of the day with the right atmospheric temperature.
Yield:
Less than 1 Kg. per vine.
Alcoholic Fermentation:
It is done with a strict temperature and pump-over control, to get the best of the varieties.
Malolactic Fermentation:
It is produced spontaneously over a period of time, without the addition of bacteria. Temperature is controlled until the end of the process.
Bottling process:
After the time and rackings needed for the natural clarification, we bottle the wine using the most modern process in order to prevent any quality loss. Then they will rest in the bottling cellar for a certain period of time until we put it on the market.
Number of bottles produced:
4.500 bottles 750 ml.
Tasting Notes:
On the nose it is very concentrated, blackberry and blueberry notes with coffee and pure cacao, ripe skin and liquorice; good balance on the palate, strong tannin but well melted, meaty and concentrated. Sweet hints, very fruity.
